Besok Masak Apa Ya? Masak Udang Tuturuga Saja (What Cook Tomorrow ? Cooking Shrimp Tuturuga)


Makanan khas Sumatera Barat ini terkenal dengan cita rasa gurih dan sedikit pedasnya. Selain itu,  juga sangat lezat. Tidak heran sih, resep udang tuturuga ini menggunakan serai, daun pandan dan daun kemangi sekaligus. 

West Sumatra typical food is famous for the taste savory and slightly spicy. In addition, it is also very tasty. No wonder still, this tuturuga shrimp recipe uses lemongrass, pandan leaves and basil leaves as well.

Bahan (ingredients) :
400 gram udang jerbung, bersihkan, buang kulitnya, sisakan ekornya (400 grams of shrimp jerbung, clean, remove the skin, leave the tail)
2 sendok teh air jeruk nipis (2 teaspoons lemon juice)
1/2 sendok teh garam (1/2 teaspoon salt)
3 batang serai, ambil putihnya, memarkan (3 stalks lemongrass, take the whiteness, crushed)
2 lembar daun pandan, potong 3 cm (2 pieces of pandan leaves, cut 3 cm)
5 lembar daun jeruk, buang tulang daunnya (5 pieces of orange leaves, remove the bone leaves)
2 sendok teh garam (2 teaspoons of salt)
500 ml santan dari 1 butir kelapa (500 ml of coconut milk from 1 coconut)
1 ikat kecil daun kemangi, petiki (1 small bunch of basil leaves, pick)
2 sendok makan minyak untuk menumis (2 tablespoons oil for sauteing)

Bumbu Halus (ground spices) :
4 buah cabai rawit merah (4 red chili peppers)
3 buah cabai merah keriting (3 pieces of curly red pepper)
8 butir bawang merah (8 grains of red onion)
4 butir kemiri, sangrai (4 grains of pecan, roasted)
2 cm jahe (2 cm ginger)
2 cm kunyit, bakar (2 cm turmeric, burn)

Cara Membuat Udang Tuturuga (How to Make Shrimp Tuturuga) :
  1. Lumuri udang dengan air jeruk nipis dan garam. Diamkan 10 menit. (Spread the shrimp with lime juice and salt. Let stand 10 minutes.)
  2. Tumis bumbu halus, serai, daun pandan, dan daun jeruk sampai harum. (Sauté fine spices, lemongrass, pandan leaves, and lime leaves until fragrant.)
  3. Masukkan udang. Masak sampai berubah warna. Tambahkan garam. Aduk rata. (Enter the shrimp. Cook until it changes color. Add salt. Stir well.)
  4. Tuang santan. Masak sambil diaduk sampai matang dan kental. Masukkan daun kemangi. Aduk rata. Angkat. (Pour coconut milk. Cook while stirring until cooked and thick. Enter the basil leaves. Stir well. Lift.)
