Rendang Kering, Kreasi Rendang Padang Yang Pas Untuk Hidangan Hari Raya

Bahan (ingredients):500 gram daging sengkel, potong 6x5 (500 grams of meat sengkel, cut 6x5)
1/2 butir kelapa parut kasar, disangrai, dihaluskan (1/2 grain grated coconut, roasted, mashed)
500 ml santan kental dari 3 butir kelapa (500 ml thick coconut milk from 3 coconuts)
800 ml santan encer sisa perasan santan kental (800 ml of diluted coconut milk remaining of thick coconut milk)
2 batang serai, memarkan (2 stalks lemongrass, crushed)
1 lembar daun kunyit, sobek-sobek (1 sheet of turmeric leaves, torn)
10 lembar daun jeruk, buang tulang daunnya (10 pieces of orange leaves, remove the bone leaves)
1 buah asam kandis (1 piece of kandis acid)
1/2 sendok makan garam (1/2 tablespoon salt)
1 sendok teh gula (1 teaspoon sugar)

Bumbu Halus :8 butir kemiri, sangrai (8 grains of pecan, roasted)
2 cm kunyit, bakar (2 cm turmeric, burn)
15 butir bawang merah (15 onion grains)
4 siung bawang putih (4 cloves garlic)
4 buah cabai merah besar (4 large red peppers)
12 buah cabai merah keriting (12 pieces of curly red chilli)
2 cm jahe (2 cm ginger)
2 cm lengkuas (2 cm galangal)

Cara membuat Rendang Kering (How to make Rendang Dry) :
  1. Rebus santan encer bersama bumbu halus, serai, daun kunyit, daun jeruk, asam kandis, garam, dan gula sambil diaduk sampai mendidih dan harum. (Boil thin coconut milk with spices, lemon grass, turmeric leaves, lime leaves, kandis acid, salt, and sugar while stirring until boiling and fragrant.)
  2. Tambahkan daging. Biarkan di atas api sedang sambil sesekali diaduk. (Add the meat. Leave on medium heat while stirring occasionally.)
  3. Kecilkan api. Masak sambil sesekali diaduk sampai santan hampir mengering. (Reduce the heat. Cook while occasionally stirring until coconut milk is almost drying out.)
  4. Tuang santan kental ke dalam rebusan daging. Aduk sampai hampir mengering. (Pour thick coconut milk into a meat stew. Stir until almost dry.)
  5. Masukkan kelapa sangrai.  Dorong-dorong perlahan dengan punggung sendok sampai betul-betul kering. Kalau daging kelihatan sudah terlalu empuk, keluarkan saja. Teruskan masak bumbunya sampai betul betul kering, tak ada kuah lagi. (Enter the roasted coconut. Push slowly with spoon back until completely dry. If the meat looks too soft, just remove it. Continue to cook the marinade until it is completely dry, no more sauce.)
